ABSTRACT A study on the effect of intensive feeding bees with sugar syrup made with confectionery invertase on the water content and HMF (2-hydroxymethyl-2-fufuraldehide), of the obtained bee honey has been carried out. It has been found that feeding bees with sugar syrup made with confectionery invertase has no negative influence on the water content, but it results in considerable increase of the HMF in bee honey.
